Mayonnaise
(or Mayo)

What is Mayonnaise

Mayonnaise is a semi-solid emulsion of vegetable oil (typically olive) and egg yolk (or whole egg) with vinegar or lemon juice, seasoned with salt, sugar, and perhaps spices (See the Food History website under reference).

Mayonnaise in History

Some consider a mixture of olive oil and egg used in Roman times to be the first example of "mayonnaise" but most regard the true origin of mayonnaise to be France. Many theories abound as to the origin of the name "mayonnaise" and the 'World of Mayo' covers most of these.
